An easy recipe using only 3 ingredients to make a quick, delicious and healthy dessert – ideal for taking to a Summer garden party or for a fun activity for the children on a rainy afternoon in August (because in the UK we have quite a few of those!).
I first saw a similar recipe in the cookbook Pinch of Nom but here, I have created a lower calorie and vegan version by using vanilla flavoured soya yoghurt and one crushed ginger flavoured oat biscuit and it tastes really good but still extremely healthy! You could use coconut yoghurt if you would like to swap the soya which would be a really great flavour too.
Here’s what you will need;
- strawberries
- yoghurt
- flavoured oat biscuits
Begin by hulling the strawberries to make a hole ready for filling.
Then carefully fill the holes with yoghurt. I used a 1/2 tsp measuring spoon to do this.
Then place the oat biscuits on a chopping board and gently crush them with a rolling pin.
Sprinkle the crushed biscuits on top of the strawberries and yoghurt – add as much as you like.
Serve immediately or chill in the fridge until needed.
Crushed Ginger Nut & Vanilla Cream Stuffed Strawberries
Ingredients
- 700 g strawberries washed
- 1/4 cup plant-based yoghurt - vanilla flavoured soy or coconut work well
- 1-3 ginger nut oat biscuits
