Bruschetta! One of the most delicious ways to eat toast! I love the combination of juicy tomatoes, fragrant basil and flavoursome fresh garlic with onions all finished with a generous amount of black pepper – all on top of toasted sourdough bread. Like pizza and spaghetti al pomodoro – it’s another favourite dish to come out of Italy using a similar combination of ingredients which all result in the same great flavours we all know and love!
Here’s what you will need;
- tomatoes
- garlic
- spring onions
- fresh basil
- basil pesto
- black pepper
- sourdough bread
Begin by preparing the ingredients by chopping the tomatoes into chunky pieces.
Next, wash and slice the spring onions finely.
Then chop the garlic.
Wash the fresh basil leaves then finely slice.
Place all of the prepared ingredients into a large bowl.
And mix together.
Next, add a generous spoonful of green basil pesto.
Toast the sourdough bread slices.
Spoon the bruschetta topping onto the toasted sourdough.
Add ground black pepper.
And serve.
Basil Pesto & Spring Onion Sourdough Bruschetta
Ingredients
- 400 g vine cherry tomatoes washed, chunky chopped
- 1 bunch spring onions washed, chopped
- 1 bunch fresh basil leaves
- 1 spoonful green basil pesto
- 1 large clove fresh garlic
- 6 large slices sourdough bread
