Blending your overnight soaked oats with some frozen blueberries and creamy, coconut yoghurt, gives this breakfast a luxury feel and really delicious flavour and texture.  Top with some sliced banana, strawberries, crushed pistachios, hemp seeds, pumpkin seeds and cacao nibs- it all makes for a really lovely breakfast.

You will need;

  • 1 cup oats soaked in water overnight, rinsed and drained the following morning.
    • I like to add some apple cider vinegar to my oats while soaking overnight as it helps with digestion.
  • 1 tsp maca root powder – gives a caramel flavour and may help to balance hormones
  • 1 tbsp pistachios – crushed
  • 1 ripe banana – use half in the oats when blending and reserve half for topping
  • 1 cup frozen blueberries
  • 1/3 cup creamy coconut yoghurt
  • 1 tbsp shelled hemp seeds
  • optional toppings: raw cacao nibs, strawberries, pumpkin seeds

Place the oats, half of the banana, blueberries and coconut yoghurt into a bowl, whizz together using a stick blender, place in a bowl to serve with the crushed pistachios and extra toppings.

Blueberry Creamed Overnight Oats with Crushed Pistachios
