Buckwheat Groats in Coconut Milk with Hemp hearts & Pecans
Ingredients
- 2/3 cup buckwheat groats rinsed under cold water
- 2/3 cup coconut milk from a carton not thick milk from a can
- 1 tsp granulated xylitol or stevia for desired sweetness
- 1 tbsp hemp hearts
- 1 handful pecans
- 1 tsp pure Maple syrup optional
Instructions
- Place the rinsed buckwheat groats in a bowl with the coconut milk and leave to soak overnight or at least for 3-4 hours for them to become soft for chewing. Leaving them for less time will mean they will be more crunchy but you are still able to eat them like this.
- Once ready for serving, top with the remaining ingredients and eat immediately.
Notes
This recipe requires overnight soaking if you want the buckwheat goats to be soft for chewing.
