These are absolutely deeelicious! Like – oh my goodness – somebody stop me from eating all of these right now!!!

Yes. They are THAT good! Eek!

Fantastic as a high protein, high energy 11am or 3pm ‘keep me going until next meal time’ snack food!  So easy to make and the rolling is rather therapeutic if you stick on some calming music in the background as I did…..

This recipe makes 20 balls and you can keep them in the fridge for about 5 days so, if you hide them from the rest of your family, at the back of the fridge, you might get to day 5 if you limit yourself to 4 a day – that’s 2 at 11am and 2 at 3pm 😉 and tell your family, they are farrrrr too healthy for their liking and it’s actually like eating cabbage and broccoli together with peas mixed in……otherwise, they will all be gone in a day and you’ll have to make more tomorrow!!!

So here’s what you will need;

  • Dates
  • Peanut butter
  • Ground almonds
  • Dark cocoa powder
  • Dark choc chips

 

Soak your dates in hot, freshly boiled water for about 20mins to soften.  Drain fully and discard the water.

Place all of the ingredients (EXCL. choc chips), into a food processor, blitz on high for about 1 minute until the dates and peanut butter is well combined and sticking together.

Now add the choc chips and pulse a few times until they are incorporated into the mixture, but not broken down fully so that you get some nice choc chip chunks to bite into in each truffle.

Using clean hands, take 1tbsp of mixture and roll it into a smooth ball.  Continue with all of the mixture until you have made about 20 truffle balls.

You can eat them straight away or store in the fridge to chill and set.

Optional: roll or sprinkle the truffles in some extra cocoa powder for an authentic ‘truffle’ look!

  • 1 tbsp dark cocoa powder plus extra for spinkling/rolling if desired
  • 2 tbsp ground almonds
  • 50 g dark choc chips
