My first cherries of the year! And what better way to eat them than with chocolate! This is a super easy breakfast which combines goji berries, blueberries and cherries with a little raw cacao mixed into oats which have been soaked then simmered in coconut milk to make them super creamy! Finished with a drizzle of pure Maple syrup, a sprinkling of chia seeds and raw cacao nibs – this is a breakfast to sit down and savour.

Goji, Cherry, Chocolate & Blueberry, Coconut Creamed Oats

Ingredients
  

  • 2/3 cup oats
  • 1 splash apple cider vinegar
  • 1.5 cups coconut milk
  • 1 handful goji berries
  • 1 handful blueberries
  • 1 handful cherries
  • 1 tbsp raw cacao powder
  • 1 tbsp chia seeds
  • 1 tbsp raw cacao powder
  • 1 tsp pure Maple syrup

Instructions
 

  • You will need to begin this recipe the evening before. Soak the oats in a large bowl with plenty of water and a splash of apple cider vinegar. All water will be rinsed away the next morning so do not worry about adding too much!
  • The next morning, rinse the soaked oats under running water for 1-2mins.
  • Add the oats to a pan with the coconut milk, bring to the boil and simmer for 15 mins, stirring every few mins and adding more milk if required to prevent sticking to the bottom of the pan.
  • Allow the cooked oats to cool for a few minutes before stirring through the raw cacao powder and goji berries.
  • Pour the mixture into a serving bowl and top with the remaining ingredients before serving.

Notes

Make 2-3x the amount of oats to save time and enjoy for breakfast for the next few days.
