Ingredients
  

  • 4 Sweet Potato Pancakes see recipe notes
  • 1 courgette shaved into ribbons
  • 1 bunch asparagus washed
  • 6 cherry tomatoes washed, halved
  • 4 spring onions washedm chopped
  • 2 large handfuls salad leaves
  • 2 handfuls blueberries washed

Instructions
 

  • Simply place all ingredients between 2 bowls and serve immediately.
