Sweetened Peanut Butter & Chickpea Biscuit Bites
Ingredients
- 400 g chickpeas pre-cooked, cooled or from a can, 400g drained weight
- 140 g smooth peanut butter
- 1/3 cup pure Maple syrup
- 1 tbsp granulated stevia or xylitol
- 1 tsp vanilla extract
- 1 tsp baking powder
- pinch sea salt
- 3 tbsp wholemeal flour add after blending all the other ingredients together
Instructions
- Preheat the oven to 200 degrees.
- Place all the ingredients, excluding the flour, into a bowl and use a hand-held blender to blend to a smooth paste.
- Add the flour and combine with a spoon.
- Take 1 spoonful of the mixture, form a ball, place on a baking tray covered with baking paper and flatten with the underside of a fork.
- Continue until all the mixture has been used. I made 15 from this mixture.
- Place in the oven at 200 degrees and bake for 15 minutes.
- Remove from the oven and allow to cool before serving.
- Store in an airtight container for 2-3 days.
