Vegan Almond, Banana & Cinnamon Waffles
Ingredients
- 1 cup oats
- 1/2 cup ground almonds
- 2 tbsp chia seeds soaked in 5 tbsp water
- 1.5 tbsp baking powder
- 2 bananas ripe
- 1 tsp cinnamon powder
- pinch salt
- 1 tbsp pure maple syrup
- 2-3 cups water
- 1 tbsp coconut oil for greasing the waffle iron
Instructions
- Mash the banana with a fork and add to a bowl with all the other ingredients (excluding the coconut oil for the greasing).
- Combine the mixture well, adding more water if needed.
- Heat your waffle iron and brush with a little coconut oil.
- Pour the mixture in to the waffle iron, remember to leave enough space for the mixture to rise during cooking.
- Cook for 10 mins or as per your waffle iron instructions.
- Serve with yoghurt and seasonal berries / fruit.
