This is a quick but luxury tasting breakfast you can eat any time of year.  If it’s Summer you can soak your oats overnight in thefirdge in the water and coconut cream and eat it with fresh blueberries but my favourite is to cook to oats slowly until soft and warm and add the cold contrast of beautiful, deep purple wild blueberries! If you haven’t tasted wild blueberries before then you’re in for a treat!  They are more expensive than the normal fresh ones you get but the taste and colour is no comparison.  I would presume they are also have an increased nutrient profile? so £ for £ I think you’re getting your monies worth 😉

Warm Coconut Creamed Oats with Wild Blueberries

Ingredients
  

  • 1 cup jumbo oats
  • 1 cup water
  • 1 heaped tbsp thick, coconut cream or use yoghurt
  • 1 cup frozen wild blueberries
  • 1 tbsp pure Maple syrup

Instructions
 

  • Place the oats and coconut cream with a cup of water into a small pan and heat on a low heat for about 5 or so minutes, until heated through.
  • Add the cooked oats to a bowl and pour on the wild blueberries and pure Maple syrup.
  • Serve!
