Ingredients
  

  • 1 cup oats soaked in water and vinegar overnight
  • 1 cup kefir
  • 1 tablespoon goji berries rehydrated in water for 10 minutes
  • 1 tablespoon ground almonds
  • 1 small handful of walnuts
  • 1 kiwi thinly sliced
  • 1 tablespoon hemp seeds

Instructions
 

Prepare the Oats:

  • The night before, soak 1 cup of oats in water and a splash of vinegar. This step is key to reducing the phytic acid content in the oats, making them easier to digest and allowing your body to absorb more of the nutrients.

Assemble Your Bowl:

  • The following morning, strain the oats and transfer them to a bowl.

Add the Kefir:

  • Pour 1 cup of kefir over the oats. Kefir is a fermented dairy product that is loaded with probiotics, which support gut health and boost your immune system.

Add Superfoods:

  • Next, add 1 tablespoon of rehydrated goji berries. These little red gems are packed with antioxidants, vitamin C, and fibre. Follow with 1 tablespoon of ground almonds, which provide healthy fats and protein, helping to keep you full throughout the morning.

Top with Nuts and Fruits:

  • Add a small handful of walnuts, which are rich in omega-3 fatty acids and provide a satisfying crunch. Then, top the bowl with thin slices of kiwi, which adds a burst of freshness and vitamin C. Finish it off with 1 tablespoon of hemp seeds for an extra boost of plant-based protein and omega-3 fatty acids.
