Blueberry Creamed Overnight Oats with Crushed Pistachios

Ingredients
  

  • 1 cup oats soaked in water overnight, rinsed and drained the following morning. I like to add some apple cider vinegar to my oats while soaking overnight as it helps with digestion.
  • 1 tsp maca root powder
  • 1 large, ripe banana sliced
  • 1 cup frozen blueberries
  • 1/3 cup coconut yoghurt
  • 1 tbsp pistachios crushed
  • 1 tbsp shelled hemp seeds

Instructions
 

  • Place the oats, half of the banana, blueberries and coconut yoghurt into a bowl, whizz together using a stick blender, place in a bowl to serve with the crushed pistachios and extra toppings.

Notes

Optional toppings: raw cacao nibs, strawberries, pumpkin seeds
