Crushed Ginger Nut & Vanilla Cream Stuffed Strawberries

Ingredients
  

  • 700 g strawberries washed
  • 1/4 cup plant-based yoghurt - vanilla flavoured soy or coconut work well
  • 1-3 ginger nut oat biscuits

Instructions
 

  • Begin by hulling the strawberries to make a hole ready for filling.
  • Then carefully fill the holes with yoghurt.  I used a 1/2 tsp measuring spoon to do this.
  • Place the oat biscuits on a chopping board and gently crush them with a rolling pin.
    Then sprinkle the crushed biscuits on top of the strawberries and yoghurt - add as much as you like.
  • Serve immediately or chill in the fridge until needed.
